Spicy Honey Chicken!

We have been on a spicy kick this week, hot damn. First the egg boats I made, except I added steak that I tossed with chili pepper flakes. Then last night’s spicy chicken salad, and now tonight. I made two different chickens because one roomie was scared of the spice on the initial one. I will say that this came out way better, and didn’t scare said roomie off, so success? The recipe was ganked from: here. Edits were minimal (mostly adding MORE PEPPER) so all credit goes to them, because goddamn, delicious.

 

  • 2 teaspoons garlic powder

  • 2 teaspoons ancho chili pepper powder

  • 1 teaspoon ground mustard

  • 1 teaspoon ground white peppercorns

  • ½ teaspoon black pepper

  • ½ teaspoon red chili flakes

  • 1 teaspoon salt

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon ground red pepper

  • 4 chicken breasts

  • Cooking spray

  • 6 tablespoons honey

  • 2 teaspoons balsamic or white vinegar (I used half and half, because I didn’t have much of either.)

wHAT TO DO:

  1. Preheat broiler.

  2. Slice chicken breasts into 1” strips, length does not matter, only how thick.

  3. All the dry ingredients get mixed together fully. Add chicken to bowl; toss to coat. Place chicken on a broiler pan coated with cooking spray. Broil chicken 4-5 minutes and flip, then 3-4 minutes depending on how big the chicken is.

  4. Add the honey-vinegar mix AFTER taking out of the oven.

I only say number 4 because uh, I added it after broiling and putting it back in and I promptly ended up with a smoky oven from the mixture broiling. Honestly, I think it worked better how it was, anyway, with it as a dipping sauce.

The biggest thing I would change, I think, is I think I want to try pineapple juice instead of vinegar. I feel like that’d taste pretty rad.
